Fuel My Friday: Guy's Greek Meatballs

For this week's Fuel My Friday James Guy serves up his Greek chicken meatball recipe - a healthy alternative spin on one of my favourite family dinners.

Ingredients:

  • 10 ounces frozen spinach (chopped)
  • 1 1/2 pounds ground chicken breast
  • 3 cloves garlic (grated or minced)
  • 1 extra large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 6 tablespoons feta cheese (crumbled reduced fat)
  • 2 ounces breadcrumbs (whole wheat bread, ground into, 1 cup*)
  • 1 teaspoon olive oil

Method:

  1. Get that oven preheated to 200 degrees!
  2. Defrost the spinach according to package directions. I do this first thing in the morning before I hit the gym, so that it’s ready for dinner
  3. Once defrosted use your hands and squeeze all of the water out of the spinach and chuck it in a large bowl
  4. Grab all the remaining ingredients and throw it all into the bowl with the spinach. Get your hands stuck in and mix it all together
  5. Next step is to make the balls! Form the mixture into 24 meatballs and place them onto a plate
  6. Grease a baking sheet with the olive oil. Place the meatballs on the baking sheet and bake in the oven, usually takes 15-18 minutes until a beautiful light golden colour
These are so versatile, you can have them with quinoa, spaghetti, pittas or a tasty salad!
