Marathon swimmer Kennedy Denby has earned great international experience this year, and her pre-swim tuna pasta bake is key to fuelling results.
Kennedy was the top British female over the 10km distance at last month's LEN Open Water Cup in Barcelona, placing inside the top 10. That result was just the latest the in a string of valuable senior international racing experiences in 2022 for the young marathon swimmer, who for this weeks Fuel My Friday tells us about her nutrition choices the night before a race.
Encouraged by her Dad’s “pasta makes you faster” mantra, the pre-race staple has become central to her routine, and could be to yours too ...Will pasta make you faster as well?
Ingredients (serves 4):
- 1 sachet tuna bake seasoning mix
- 200g tin of tuna, drained
- 225g pasta
- 425ml milk
- 115g sweetcorn (frozen or tinned )
- 80g grated cheese
Method:
- Cook pasta as per its cooking instructions.
- Add sachet contents to a saucepan, mix well with a splash of milk, before stirring in the rest of the milk. Bring this to the boil and stir continuously.
- Add your cooked pasta, tuna and sweetcorn.
- Move into an ovenproof dish and top with cheese, then place under a hot grill until crisp and golden.
- Spoon out onto a warm plate and tuck in!
