This week's Fuel My Friday recipe is the perfect side for a summer barbecue, is simple to make and high in fibre: it's summer slaw.
Ingredients:
1/4 red or white cabbage
1 large carrot
1/2 onion
1 tablespoon mayonnaise
1 teaspoon mustard
Handful of sultanas or raisins
Method
Peel the onion
Grate the carrot, onion and cabbage into a large mixing bowl
Add the mustard and mayonnaise and stir until all the vegetables are coated
Stir in the raisins and serve
